Chassis / Motorcycle brake disc on transaxle stub

Howdy--new to the forum; looking forward to access to the wealth of knowledge here.
I am building a parade vehicle from a riding mower. It's a great combo, because the mower is made for low speed and tight maneuverability. So max speed might be 25mph or so. I am building on a square tube frame I fabricated.
I do not intend to lock the rear end because I don't want to lose the maneuverability. So the brake: Can I put an 8" disk on the tranny stub for a hydraulic setup? Seems that would be easier than two discs on the back axles. BTW, I do have room on the axles for discs because I am using kart 4x4 hubs with trailer wheels and tires.
Thanks for your help. I can include pix if that would be helpful.
