I just smoked a rack of honey glazed ribs...they taste like Bacon...!!!

:omg: OMG I always say "these are the best ribs ever", but THIS TIME these are my "Best Ribs Ever"...

I'm gonna save this recipe, with the secret dry rub and the special honey/soy mop... :drool:

I never have been very good with charcoal... could never get the heat right..

I usually put the ribs on my rotisserie .. not the same but keeps me from burning them...

I use a Brinkman Smoker now, used to use the grill but heat was too inconsistant and hard to maintain at the correct low temp...

I bought a smoker last year and only tried it once.. now that I saw those ribs it's time to get it back out for another try!!!

At the risk of sounding naive to the Northern way of grilling, why do you want your ribs to taste like bacon?

Come on down to the deep South and let a local Southern boy show you how ribs are supposed to taste... lol

 My Dad is HUGE into smoking meat. He has two large smokers- one that is a barrel with a smaller barrel for the wood attached to the right. The other one he sort of half-built. Its a 4 foot tall steel box with layers of racks inside. At the bottom he has a propane burner. On top of that is a pan that he puts pieces of apple and cherry wood into. He will turn the burner on low and the wood very slowly smolders away. The last time I went to their house he started several racks of ribs and some brisket that night and let it smoke until the next afternoon. No rub, no sauce, just the flavor from the wood. Best BBQ I've ever had. Man I am hungry.

It's hard to describe taste on the net, but bacon was the closest to conjuring up a mouth watering smoky sweetness that melts in your mouth and makes the drool run down your chin...

And I don't care where your from, I'll put my ribs up against any...any day...  :burnout:

(or my Turkey, or my Salmon)
(or Trout or better yet Prime Roast)
