Trackside cuisine?

I'm guessing the All-American, and most big races, re-inact the campfire scene from Blazing Saddles when it comes to trackside cuisine. I'll be around and take pictures of all the buffets, and if any of you all want to share your recipes, we'll write them down. My wife's allowance for me for the trip will probably feature a lot of side meat (bacon) and more beans ... there's got to be a dressy way to mix up the vittles. I'm open to suggestions!
